Smith’s is located in the picturesque hills of Winchendon, Massachusetts. At Smith’s Farmstead, old-fashioned family traditions and hard work are combined to produce Farmstead Cheeses. As soon as their last cow is milked, the milk gets pumped into the cheese vat to start the cheese-making process. Their machines can milk up to 60 cows per hour. Smith’s Gouda rivals any made in the Netherlands; it has the same mild taste, creamy texture and small, bubbly eyes. An excellent dessert cheese, it is also great for cooking and melts beautifully. Their cheeses have won numerous gold and bronze models at local, national and international competitions. Smith’s Country Cheese set a goal of cutting their power consumption by 50 percent by using solar technology and conservation techniques to reduce their carbon footprint.
